Cool New Ways to Ferment Red Wine
In order to fully extract cool climate red wines such as Pinot noir during fermentation while retaining finesse and an expression of terroir, we continue to seek innovative winemaking methods. Perhaps the most influential consultant in Pinot noir winemaking is Kyriakos Kynigopoulos, who as a biochemist has developed a scientifically sound protocol that includes cryogenics, proprietary yeasts and enzymes, high levels of sulfur, protracted cold soaks and secondary fermentation times and other elements to yield wines with good extraction, color stability, palate weight and ageability. Anthony Colas, his consulting associate, will present the methodology, followed by an in-depth panel discussion with several well known winemakers who have employed the process with success.
